You just need to learn how to cook them the right way, as Moroccans do. This post provides you with a recipe for Moroccan fried sardines.


Sardines are a staple seafood in Morocco. These healthy, omega-3-rich fish are the most consumed fish in Morocco due to their relatively low price and abundance in local markets. There are many ways to cook sardines in Morocco, but frying is the most popular method.


Fried sardines are well-known in Moroccan cities such as Casablanca, Tangier, and Essaouira. In Casablanca, street vendors serve them sandwiches with spicy harissa and pickles. Tangier is also famous for its fried sardines. locals there enjoy them as a quick and tasty snack. However, the freshest fried sardines are a specialty of Essaouira, where they are served with salads, traditional Moroccan bread, and other side dishes.

Fried Moroccan Sardines Recipe: Ingredients

This is the list of ingredients that you need to make the Moroccan fried sardines dish. This quanity is suitable for 2 to 4 people.


  • 1 kg fresh sardines, cleaned and gutted

  • 2 tablespoons ground cumin

  • 2 tablespoons paprika

  • 4 cloves garlic, minced

  • 1 tablespoon ground coriander

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • Juice of 1 lemon

  • 1/2 cup chopped fresh parsley and cilantro (mixed)

  • 1 cup flour (for coating)

  • Vegetable oil (for frying)


Instructions

Step 1: Process the Sardines

The first step is of course to process the sardines. Remove the head, internal organs, and side bones along with the spines if you want. Put the processed sardines aside so you can work on the Marinade, which is a mix of spices and commong herbs plus other simple ingredients.


Step 2: Prepare the Marinade (Chermoula)

Chermoula is the Moroccan name for a marinade used for different types of fish, including sardines. It is a mixture of spices and herbs that gives fish dishes in Morocco their extra Mediterranean flavor. It is also an easy-to-make marinade with popular ingredients. Here's how to make chermoula: In a large bowl, mix the cumin, paprika, minced garlic, coriander, salt, pepper, chopped parsley, and cilantro. Add the lemon juice and stir to combine into a thick marinade.


Step 3: Marinate the Sardines

Place the cleaned sardines in the bowl with the marinade. Make sure each sardine is well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour. If you are not in a hurry, it would be worth keeping the sardines marinating for up to 3 hours.


Step 4: Coat & Fry the Sardines

After marinating, take each sardine and coat it lightly with flour. If you removed the spines, then join two sardines together as I explained earlier. Shake off any excess flour then continue to frying. In a large frying pan, heat enough vegetable oil to cover the sardines over medium-high heat. Once the oil is hot, carefully place the sardines in the pan and make sure not to overcrowd them.


Fry each side for about 2-3 minutes, or until they are golden brown and crispy. Use a slotted spoon to transfer the fried sardines to a plate lined with paper towels to drain excess oil. Please be careful when dealing with hot oil.


Making The Tomato Sauce for The Fried Sardines

The Moroccan tomato sauce is a flavorful, spiced tomato sauce that complements the taste of grilled or fried sardines. It is simple to make and doesn't require a lot of time to be cooked. It is also made with simple ingredients. Here’s a simple recipe:

  • 4 large ripe tomatoes, peeled and chopped

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 tablespoon paprika

  • 1 tablespoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cinnamon

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon sugar (optional, to balance acidity)

  • 1/4 cup chopped fresh parsley and cilantro (mixed)

  • Juice of 1/2 lemon


How to Make Tomato Sauce

First, heat the olive oil in a large pan over medium heat. Add the chopped onion and cook for about 5 minutes until softened and translucent. After those 5 minutes, add the minced garlic to the pan and cook for another minute until fragrant.


Second step is to combine all ingredients: Stir in the chopped tomatoes, paprika, cumin, coriander, cinnamon, salt, pepper, and sugar (if using) and mix until all ingredients blend well. Reduce the heat to low and let the sauce simmer for about 15-20 minutes. Keep stirring occasionally until the mixture thickens and the flavors meld together.


Add the chopped parsley and cilantro, and the lemon juice. Stir well and cook for another 2-3 minutes. This is the last step in making the tomato sauce for the fried sardines. 200g dried red chili peppers (a mix of mild and hot peppers for a balanced flavor)

4 cloves garlic, peeled

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground caraway seeds

1 teaspoon salt

3 tablespoons olive oil (plus more for storing)

2 tablespoons lemon juice

1 tablespoon white vinegar (optional for extra tang)


How to Make Harissa

First, prepare the chili peppers by removing the stems and seeds from the dried peppers. If you like extra heat, you can leave some seeds in. Soak the chili peppers in warm water for about 30 minutes until they become soft. After soaking, drain the peppers and pat them dry.


Next, blend the ingredients by placing the softened chili peppers, garlic, cumin, coriander, caraway, and salt into a food processor or blender. Add olive oil and lemon juice, then blend until you achieve a smooth paste. If needed, add more olive oil to reach your desired consistency.


Once blended, taste the harissa and adjust the seasoning if necessary. For a tangier flavor, you can add white vinegar. If the harissa is too thick, thin it out with a little more olive oil.


To store the harissa, transfer it to a sterilized jar and pour a thin layer of olive oil on top to help preserve it. Seal the jar and keep it in the refrigerator. Properly stored with the olive oil layer, it can last up to a month.

Add vinegar and salt, then mix everything in a large bowl. You can let the salad cool before serving it alongside the sardines.
