Ingredients of Moroccan Lamb Tagine

To cook the lamb tagine, you'll need to gather the following ingredients. We will be using each set of ingredients during different steps to finally assemble the tagine at the end.


  • 2 lbs (900g) lamb shoulder or leg, cut into chunks

  • 2 onions, finely chopped

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground turmeric

  • 1 teaspoon paprika

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon saffron threads (optional)

  • 1 cup (240ml) water

  • 1 cup dried apricots, halved

  • 1/2 cup pitted green olives

Cooking The Lamb Tagine Step By Step

After gathering all the ingredients, it's now time to start cooking our lamb tagine. We will help you learn the way step by step. Please make sure you're using a clay tagine pot and not a metal one. The taste of tagines cooked in clay pot are much better than those cooked in metal pots.


Marinate the Lamb
